    Ginger biscuit pud

I have a new book out! Hurrah! Six Minute Showstoppers came out this week and I am SO excited to share my new recipes with you. I'll be posting plenty of sneak peeks online, but for those of you who want a hard copy (or e-book) in your hands, you can buy one here on Amazon. And whenever book shops open again, it'll also be on the shelves there! Anyway, for now, here's a tasty pud to tide you over. Ginger biscuits, piled high with pillowy clouds of cream cheese frosting... wh

    Gooey lemon pudding

For those days when you just need some good, old-fashioned comfort food, it's hard to beat a stodgy, spongey lemon pudding. The sort your Grandma just to make, to cheer you up and put a smile on your face for the rest of the week. Self-saucing, which means it has a gooey underneath that keeps the sponge nice and moist, this pud is a failsafe favourite - and still tastes good the next day, and the day after that, paired with a scoop of vanilla ice-cream. If you don't like lemo

So shake off those Sunday blues and fill the house with delicious aromas of crisp, toasty brioche pudding. You'll be dreaming of this one for months to come. Serves 6 Ingredients: 8 slices of brioche (approx 250g) 1 x 400ml can of coconut milk

    Piña colada puffs

If you like piña colaaaaadas... Sorry. Shhh. But if you do like piña coladas, you will LOVE these. Inspired by the classic retro cocktail (which, incidentally, my sister adores as she says it tastes like summer), I've invented these pastry puffs, stuffed full of creamy pineapple yumminess. They may look tricky to make, but once you get the hang of it, I promise you could whip them up with your eyes closed (not recommended, but they are that simple). Then you can wow dinner pa

    Honey cake

This simple, one-layer cake is dense, moist and syrupy. It uses almonds instead of flour, which gives it a rich, toasty texture, and whisked egg whites to give it height. Not only does it make a great pudding, served with ice cream, whipped cream or yoghurt, but a slice of this and a cup of tea is the perfect afternoon treat. Great for lazy Sundays snoozing on the sofa in front of the TV... (PHOTOGRAPHY: Al Richardson) Serves 8-10 people Ingredients: 4 eggs 5 tablespoons runn

    Upside-down pear pud

This comforting, fruity pud reminds me of my childhood: something warm and stodgy to tuck into on a chilly evening, preferably drenched in homemade custard. It really brings to life the idea of food as therapy - there’s no bad day a dish like this can’t cure. Upside-down desserts may sound a bit retro but they’re making a comeback - trust me - and they’re strangely satisfying to make, arranging the pieces of fruit on the base of the tray in a symmetrical jigsaw.
