Peanut oat squares

Oaty, nutty and just the right side of healthy, these delectable little squares will give your energy levels a boost and satisfy your sweet tooth - all in one yummy bite.

If you want to use more than three ingredients, you can add all sorts of extras - from chocolate chips (naughty) to raisins (not-so-naughty), dried fruit and whole nuts, or spices such as cinnamon, nutmeg and ginger to give them a lovely warming aftertaste.



Makes 25

Ingredients:

250g rolled oats

6 tbsp honey

200g peanut butter

Method:

Grease and line a 20cm square tin with a little butter and greaseproof paper.

Melt the honey and peanut butter in a saucepan over a low heat for a few minutes, stirring constantly, until runny.

Pour this over the oats and mix well. Tip the mixture into the prepared tin and press down firmly using the back of a spoon.

Put the tin in the fridge for 1-2 hours so the mixture hardens up before slicing into squares. Keep refrigerated; they should last 5-6 days.
